Coconut pikelets!!

400 ml coconut milk
2 cups SR flour (2 c plain flour + 3 tsp baking powder)
1 tbsp honey / agave nectar 
2 eggs
1/2 cup water

Combine all ingredients and whisk until smooth.  Cook in a non-stick frypan and when bubbles appear flip over.  Serve warm.  YUM!!
